To prepare a delicious veggie omelet, whisk together a few eggs and add vegetables like spinach, bell peppers, and onions sautéed in your favorite paleo cooking oil (I like this duck fat from Epic). Cook on medium heat with a lid on, until the eggs are set and the veggies are tender. You can also add avocado on top for an extra dose of healthy fats. In the summer I love to add fresh, course-chopped, vine-ripened tomatoes to my omelets. A bit of your favorite cheese, while not paleo, adds a boost of additional protein. And if you are a dairy enthusiast, a splash of organic cream whisked in with your eggs will make the perfect light and fluffy omelet.


2. Sweet Potato Hash


Sweet potatoes are a fantastic paleo-friendly ingredient. They are rich in vitamins and minerals and provide a sweet flavor that compliments savory dishes. To make a sweet potato hash, dice sweet potatoes and cook them in a skillet with onions, bell peppers, and your choice of protein, like ground turkey or breakfast sausage. Season with salt, pepper, and your favorite herbs for a tasty and filling meal.

Put it in a wide-mouth mason jar the night before and it makes a great grab-and-go for work the next morning!

The texture of chia seeds is not my favorite, so adding a bit of crunch from nuts and seeds, or paleo granola makes it much more palatable to me.
